Pairing French Elegance and Japanese Sake in Thailand’s Premier Dining Experience
The last pairing dinner of 2023 at Mezzaluna, Thailand’s highest Michelin 2-star restaurant, leading by Japanese chef Kawasaki-san, who presents French cuisine with a Japanese essence, was truly dreams come true. For this year’s event, in addition to champagne and wine pairings, I also added special sake. I wanted to see how the finest French cuisine and traditional Japanese sake, would harmonize with each other. As a result, the pairing of fine French cuisine with sake was an exquisite harmony created by the delicacy of sake, which cannot be experienced only with luxurious wines such as Champagne, Bordeaux, and Burgundy. Because sake is made from rice and water and has a gentler character than wine, so I realized that it can help envelop the food and keep it going from start to finish with sake. Due to the delicate character of sake, a stand-alone pairing with a meat dish in the main course may feel a bit insufficient. However, they do not conflict in taste.
The sake chosen this time was Born “夢は正夢” Yume wa Masayume Junmai Daiginjo means “Dreams come true. It has a name and character appropriate for the New Year, and its rich flavor is an excellent choice for fine French cuisine. This sake has the characteristics of Lovely, fruity aroma, Silky smooth mouthfeel, Delicate and elegant taste. Please enjoy it with a glass of white wine.
