How it is made

Two aromatic signatures: sesame shochu and Kojiro ume

Beniotome Shuzo steeps Kojiro ume in the aromatic sesame shochu for which the producer is known. The plum remains the centre of the liqueur, while a roasted sesame nuance gives its richness greater depth.

01

A foundation of sesame shochu

The producer’s signature sesame shochu forms the base, adding a gently roasted aromatic layer beneath the fruit.

02

Kojiro ume is steeped into the base

Firm-fleshed Kojiro ume, a variety traditionally suited to umeshu, supplies concentrated fruit character and bright acidity.

The result

Roasted fragrance, plum acidity and velvety weight

The perfume of sesame shochu meets concentrated plum in a fuller style than many conventional umeshu, carried by a smooth texture and a lingering finish.

Taste profile

Concentrated plum with a roasted sesame nuance

Concentrated plum with a roasted sesame nuance

Ripe, sweet-tart plum aromas are underlined by the toasty character of sesame shochu. The palate is rich and silky, with concentrated fruit and savoury depth. Acidity keeps the shape clear before a gently nutty note extends the finish.

Food affinities

Where concentrated plum meets roasted sesame

These pairings are not combinations stated officially by the producer; they are a reading drawn from the characteristics recorded on this product page.

Ripe, sweet-tart plum meeting acidic startersFig and prosciutto salad and other acidity-led Western starters align with the ripe, sweet-tart plum aroma, alongside Thai green mango salad (yam mamuang) and Japanese ume-shiso pork shabu-shabu.
The toasty sesame shochu note meeting sesame-forward dishesTahini hummus and other sesame-forward Western dishes align with the toasty sesame note, alongside Thai satay with its peanut-sauce toastiness and Japanese sesame tofu or sesame-dressed chicken.
Velvety weight and umami meeting richly sauced dishesNut-topped roasted vegetables and other rich Western dishes align with the velvety weight and umami, alongside Thai pad thai with its tamarind acidity and stir-fried toastiness and Japanese shabu-shabu with sesame sauce.
A lingering nutty finish meeting dessert sweetnessHazelnut tart and other nut-forward Western desserts align with the lingering, sesame-like finish, alongside Thai mango sticky rice and Japanese black sesame pudding.

This pairing rationale draws on the following reference books: “Food Pairing Encyclopedia” records that roasted sesame’s aroma shifts toward nutty, toasted and caramel notes, sharing an aroma family with mango, tamarind and dates; following the harmony concept in “Logical Pairing,” this toasty sesame note resonates directly with sesame- and nut-forward flavours in a dish.

The producer

Beniotome Shuzo in Kurume, Fukuoka

Beniotome Shuzo was founded in 1978 by Haruno Hayashida, who started the company at the age of 66. Her pursuit of a shochu that expressed sesame aroma established the producer’s defining style. BENIOTOME Umeshu carries that same signature into a plum liqueur.
