BAKKAN NASAKESHIMA is a 25° honkaku barley shochu from Hachijo Island, designed with white koji, atmospheric pot distillation, and a balanced, full-bodied sweetness profile. Brewed by Hachijo Koubou in the tradition of Japan’s authentic regional distilling, this sake-grade-inspired shochu focuses on soft roast sweetness and rounded texture that works well in food pairing, including rice dishes and bold savory plates. Aroma notes are typically roast barley, barley chocolate, and cocoa, with a smooth finish that avoids harsh bitterness.
Culinary affinity: Roast flavor and gentle sweetness pair well with grilled fish, poultry, umami-rich Thai dishes, pasta with brown butter or mushroom notes, and mild desserts. Water or sparkling water is recommended for service.
