Côte Chalonnaise, Burgundy, France
DOMAINE DE VILLAINERully 1er Cru Les Champs Cloux
Beneath the walls of an old château, a single east-facing slope of deep, iron-rich clay gives this Pinot Noir its quiet intensity — a wine that unfolds slowly, layer by layer, as it settles in the glass.

The Wine
Domaine de Villaine acquired the Les Champs Cloux climat in 2015 and released the first estate-grown wine from it in 2016; the vines on this east-facing slope are reported to have been planted in 1936.
Pierre de Benoist now directs the estate, continuing its focus on the east-facing slopes beneath Château de Rully that give this Pinot Noir its character.

At the table
This Pinot Noir's silky tannins and bright acidity find natural partners across three culinary traditions.
Its structure favors dishes built on umami depth or gentle char rather than heavy spice, letting the wine's fruit and soil-toned complexity carry through.
Japanese
- Roast duck breast
- Seared akami wagyu
- Unagi kabayaki
Why it worksThe wine's silky tannins and bright red-fruit acidity echo the umami depth of dashi-based glazes and the gentle char of grilled duck and beef, without overwhelming their delicacy.
Thai
- Mu yang (grilled pork shoulder)
- Gai yang (grilled chicken)
- Nuea yang (grilled beef)
Why it worksSimply seasoned, charcoal-grilled proteins let the wine's fruit and soil-toned spice come through, and its structure sits comfortably alongside smoky char rather than heavy chili heat.
Western
- Canard à l'orange
- Confit de canard
- Roast Charolais beef
Why it worksClassic preparations of duck and beef mirror the producer's own recommendation for lightly roasted poultry and red meat, matching the wine's fleshy palate and spice-toned finish.
From cellar to bottle
Winemaking
Hand-harvested and sorted, the grapes ferment with indigenous yeasts in open wooden vats before roughly two weeks of maceration; the wine then ages eighteen months in 228-litre barrels with minimal new oak.
