About the Wine

Domaine de Villaine farms Les Montots as a single lieu-dit within the Mercurey appellation, on a fairly steep, south-facing slope prized for its sun exposure and drainage. The vines themselves are a massal selection brought over from Nuits-Saint-Georges, chosen for aromatic quality and moderate yield.

2020 was a warm, dry growing season across Burgundy with low disease pressure, giving the fruit strong ripeness and concentration. It was also the last vintage in which Les Montots was vinified and bottled entirely on its own, before a 2021 spring frost led the estate to blend the parcel into a broader Bourgogne Rouge.

Taste profile

In the glass

Crushed strawberry, raspberry and cherry lead, layered with black pepper, violet and a faint lactic note.

Structured and vigorous, with tannins that turn silky on the palate; a youthful firmness gives way to a long, almost saline mineral finish.

Deep, bright dark ruby, with youthful blue tones that shift toward garnet at the rim as the wine ages.

Before it reaches the glass

01

Temperature

Serve at about 15.5°C within the first five years, rising to about 17.7°C as the wine matures beyond that.

02

Timing

Drinking window 2027–2040, with the wine's fullest expression expected between 2030 and 2038.

03

Glassware

A Burgundy grand cru glass (such as Zalto Burgundy or Riedel Burgundy) allows the aromatics room to open.

At the table

The wine's structure and bright acidity work best with dishes that have their own weight and umami depth, without heavy spice or high-fat soft cheese.

Because Les Montots carries firm tannins alongside a saline mineral finish, it pairs more comfortably with grilled or roasted proteins than with delicate or highly spiced dishes. The producer specifically cautions against soft, bloomy-rind cheeses such as Camembert, Brie or Vacherin, whose creamy fat and ammonia notes can clash with the wine's tannic structure; firmer cheeses such as Comté or Beaufort are a safer match.

Japanese

  • Wagyu A4 akami steak
  • Roast duck breast
  • Duck nanban soba

Why it worksLean, savory grilled or simmered duck and beef dishes echo the wine's firm structure without competing with delicate fat, letting the fruit and pepper notes come through.

Thai

  • Massaman beef curry (mild)
  • Nuea yang (grilled beef)
  • Pet yang (grilled duck)

Why it worksMild spicing and charred, savory flavors bridge with the wine's structure, while high-chili or fish-sauce-forward dishes would overwhelm it.

Western

  • Roast Charolais beef
  • Roast game birds (pigeon, quail, pheasant)
  • Roast saddle of lamb

Why it worksClassic Burgundian pairings of roasted red meat and game match the wine's tannic backbone and long finish.

Winemaking

Grapes are hand-harvested and carefully sorted; fermentation follows the estate's general practice of wooden vats with indigenous yeast, with gentle extraction to protect the aromatic finesse of the Nuits-Saint-Georges vine selection, and new oak is essentially not used.
