About the Wine

Je t'aime mais j'ai soif takes its name and spirit from Domaine Le Fay d'Homme, a fifth-generation family estate near Monnières in the Muscadet Sèvre et Maine appellation, run by Vincent Caillé since 1986.

The cuvée traces back to the frost-hit 2017 vintage, when a sharp drop in yields led Caillé to blend in Marsanne from a friend in the Ardèche; it has since evolved into a Vin de France blend built entirely from the estate's own organic, biodynamic-farmed grapes.

A Vin de France blend of estate-grown Melon de Bourgogne, Sauvignon Blanc and Sémillon.First created after the 2017 spring frost, when a sharp yield loss led Vincent Caillé to blend in Ardèche-sourced Marsanne before the cuvée evolved into today's estate-grown blend.Fermented with native yeasts over 17 days and aged in traditional underground concrete tanks, a cellar practice typical of the Pays Nantais region.The domaine has been organic-certified by Ecocert since 2007 and biodynamic-certified by Demeter since 2012.The label was designed by artist Mika.

Winemaking
