Layering Yuzu and Sea Salt over Sake

Layering Yuzu and Sea Salt over Sake: The Anatomy of “Shio Yuzu”

“The Sake Staircase” Series, Episode 7 | Step 4: Liqueurs, Part 2

The Architecture of Infusion

In our previous exploration, “Shochu at Its Base, Liqueur by Category,” we traced how “MATCHA CAT” layers green tea over a foundation of authentic barley shochu. Episode 7 marks our continued journey on the fourth step of the staircase, shifting the focus to a different alchemy of base and botanical: “Shio Yuzu.” Crafted by the historic Kitajima Sake Brewery in Shiga Prefecture, this expression is introduced within the curated UMESHU-YA selection of the NIPPON HAKU Bacchus lineup.

According to the product information for SHIO YUZU, its product category is liqueur. The published product information and ingredient list show a base of sake combined with yuzu, fructose and salt. The salt is described as traditional sea salt from Izu Oshima.

Three Pillars of Flavor

Rather than viewing it merely as a blend, we focus on three distinct pillars that define its character: the foundational sake, the citrus, and the sea salt. Together, they reveal how a thoughtfully chosen base interacts with its layered ingredients.

The first pillar is the sake itself. Here, it transitions from a standalone category into the foundational canvas upon which yuzu and sea salt are layered|a seamless bridge between traditional sake brewing and contemporary liqueur production.

The Artisan and the Elements

The manufacturer, Kitajima Sake Brewery, was founded in Konan City, Shiga Prefecture, in 1805. In Konan, southeast of Lake Biwa, the brewery has continued making sake using groundwater from the Suzuka mountain range and Omi rice. Be sure to distinguish UMESHU-YA, the category under which the product is presented, from Kitajima Sake Brewery, its manufacturer.

The second clue is yuzu. Yuzu appears in the ingredient list, but the public information reviewed does not identify its variety or growing location.

The third clue is sea salt from Izu Oshima. “Salt” appears not only in the product name but also in the ingredient list, making it part of the product’s stated composition.

Various explanations describe how sea salt may affect acidity and sweetness. This article does not state effects that cannot be sufficiently confirmed from published primary sources. The three clues that can be confirmed from public information are sake, yuzu and sea salt from Izu Oshima.

A Distinct Harmony

While MATCHA CAT combines tea with authentic barley shochu, Shio Yuzu layers yuzu and sea salt over sake. Both reside within the “liqueur” classification, yet their inner architectures differ completely. By examining the base alcohol alongside its infusions, we discover the sheer versatility hidden within Step 4 of our journey.

This series gently traces the nuances of Japanese spirits as we approach KANPAI THAILAND 2026, held at the Queen Sirikit National Convention Center (QSNCC) from August 28 to 30, 2026. Reaching the fourth step once more only illuminates the subtle complexities hidden under a single label.

The staircase continues upward.
