For many in Bangkok, encountering Japanese spirits often begins with a shared hesitation. Intricate characters on labels, overlapping categories, and subtle distinctions can blur together. Too often, a diverse heritage is reduced to a single impression: an expensive, yet elusive, Japanese drink.
Yet, washu is far from monolithic. It unfolds like a staircase of five distinct steps, each shaped by its own philosophy. There is a step where rice is brewed, a step where aroma is drawn out through distillation, and a step where fruit and time are sealed away. When the step changes, the very core of how the drink is crafted changes with it.
At Kanpai Thailand 2026, held from August 28 to 30 at the Queen Sirikit National Convention Center (QSNCC), forty legacy breweries and distilleries will gather. Without a guide, however, forty individual stories can easily dissolve into a maze. One might wander from booth to booth, searching for a thread to follow as the afternoon slips away.
This series serves as that map—an invitation to navigate the venue with intention. By tracing washu across five structural steps, we explore the artisans, the terrain, and the philosophies behind each vessel. It is not a textbook, but a compass.
An overview of the journey ahead:
The First Step: Sake
A brewed liquid born from the precise polishing and fermentation of rice. The degree of milling, the character of the local water—these deliberate choices shape its final silhouette.
The Second Step: Shochu
A distilled spirit capturing the essence of its raw ingredients through koji fermentation and meticulous distillation. Sweet potato, barley, rice—each infuses the vapor, changing the aroma that rises from the glass.
The Third Step: Umeshu
A preservation of time, where whole fruits are steeped gently in alcohol and sugar. It represents a broader tradition of fruit liqueurs integrated into Japanese seasonal life.
The Fourth Step: Liqueur
A realm of blending and balance, ideal as an aperitif. Infusions of yuzu, matcha, sea salt, or cassis offer a canvas of freedom and creative composition.
The Fifth Step: Craft Gin and Craft Beer
The frontier where breweries apply decades of fermentation and distillation expertise, reshaping traditional craftsmanship into contemporary expressions.
These steps do not imply progression from novice to expert; each is an independent landscape governed by its own laws. Understanding them brings clarity to the forty booths at the convention, allowing you to discover where your curiosity naturally pulls you.
As preparations continue, the specific selections from each producer will be finalized. While the featured brands may evolve before opening day, this series will unfold step by step, sharing only what has been carefully verified.
This map converges at three distinct pillars in Bangkok. Salon du Japonisant provides a sanctuary to absorb the quiet narratives of the breweries at a lingering pace. Nadaya Saketen, a traditional purveyor, offers curatorial expertise from a professional perspective. And KOUJI ALCHEMIST by salon du japonisant reinterprets shochu and koji-based spirits through the lens of modern fermentation. It is a single map of washu, read through three distinct perspectives.
For years, we have brought these spirits to Bangkok, bottle by bottle. Yet, behind every label lies a terroir, a community, and a stretch of time. Before you encounter the glass, we offer this map—not as a guide to purchase, but as a lens to render a vast, beautiful world a little more visible.
