The Architecture of Infusion
In our previous exploration, “Shochu at Its Base, Liqueur by Category,” we traced how “MATCHA CAT” layers green tea over a foundation of authentic barley shochu. Episode 7 marks our continued journey on the fourth step of the staircase, shifting the focus to a different alchemy of base and botanical: “Shio Yuzu.” Crafted by the historic Kitajima Sake Brewery in Shiga Prefecture, this expression is introduced within the curated UMESHU-YA selection of the NIPPON HAKU Bacchus lineup.

Classified elegantly as a liqueur, Shio Yuzu weaves together a foundation of Japanese sake with vibrant yuzu, fructose, and a touch of traditional sea salt sourced from the shores of Izu Oshima.

Three Pillars of Flavor
Rather than viewing it merely as a blend, we focus on three distinct pillars that define its character: the foundational sake, the citrus, and the sea salt. Together, they reveal how a thoughtfully chosen base interacts with its layered ingredients.

The first pillar is the sake itself. Here, it transitions from a standalone category into the foundational canvas upon which yuzu and sea salt are layered—a seamless bridge between traditional sake brewing and contemporary liqueur production.

The Artisan and the Elements
The artisan behind this creation, Kitajima Sake Brewery, has operated in Konan, Shiga Prefecture, since 1805. Nestled southeast of Lake Biwa, the brewery utilizes the pristine underground water of the Suzuka mountain range and local Omi rice. While presented under the curated UMESHU-YA category, the liquid’s soul belongs to the centuries-old craftsmanship of Kitajima.

The second element is the yuzu. While simply noted on the label without detailing its specific terroir or variety, its presence offers a bright, aromatic contrast to the rich depth of the brew.

The third element is the sea salt from Izu Oshima. Far from being a mere footnote in the name, this traditional salt is an integral component, introducing a delicate mineral dimension to the blend.

While many debate how sea salt interacts with sweetness and acidity, we honor the quiet simplicity of the facts: the thoughtful union of sake, yuzu, and Izu Oshima sea salt speaking for itself.

A Distinct Harmony
While MATCHA CAT introduces tea to an authentic barley shochu, Shio Yuzu anchors citrus and minerals in sake. Both reside within the “liqueur” classification, yet their inner architectures differ completely. By examining the base alcohol alongside its infusions, we discover the sheer versatility hidden within Step 4 of our journey.

This series gently traces the nuances of Japanese spirits as we approach KANPAI Thailand 2026, held at the Queen Sirikit National Convention Center (QSNCC) from August 28 to 30, 2026. Reaching the fourth step once more only illuminates the subtle complexities hidden under a single label.
