AOC Jurançon Sec
CLOS REGAINSec 2022
Inside an established Jurançon estate, a Québécois newcomer set out to give selected parcels a voice of their own, naming the project after a French writer who believed in the land's power of renewal. … Sec carries that idea into the glass: a dry white built more on texture and fruit than on any single dramatic note.

The Story Behind the Bottle
Clos Regain began in 2019, when Québécois entrepreneur Michel Boutin took over Château Jolys, an established Jurançon estate, and built a parcel-focused project inside it — a domaine within a domaine. The name pays tribute to French writer Jean Giono.
Within the range, … Sec is the multi-varietal dry cuvée, distinct from the barrel-fermented La Côte des Brumes. Wine Enthusiast rated the 2022 vintage at 91 points.

Temperature
12°C, allowing a short rest out of the fridge before serving so the aromas open fully.
Timing
A wine whose appeal centers on freshness in its earlier years rather than long cellaring.
Glassware
A medium-bowled white wine glass, or a slightly wider bowl to show off its creamy texture.
At the table
The wine's ripe fruit, creamy lees-driven texture and lively acidity give it a natural range across different culinary traditions.
Because the richness here comes from lees contact rather than oak, Sec favors dishes with delicate umami or gentle richness instead of heavy sauces or char. Its acidity keeps pace with citrus- and herb-driven preparations, while its fruit-forward style lets it sit alongside mild spice without being overwhelmed.
Japanese
- Sushi
- White fish sashimi
- Salt-grilled chicken
Why it worksThe creamy, lees-derived texture echoes the delicate richness of raw and lightly cooked seafood, while the wine's acidity keeps the pairing clean.
Thai
- Lime-steamed sea bass (mild)
- Mild seafood salad (yam talay)
- Fresh spring rolls
Why it worksHerbal and citrus notes in these dishes align with the wine's own fruit character, while its higher alcohol works best against gentle heat rather than strong chili.
Western
- Goat cheese
- Seared scallops
- Caesar salad
Why it worksA classic regional match: the tang of goat cheese and the natural sweetness of scallops both meet the wine's creamy fruit halfway.
From cellar to bottle
Winemaking
Grapes are destemmed and given a cold skin contact before gentle pressing; fermentation takes place in temperature-controlled stainless steel tanks, with no oak used at any stage. The wine is then aged on its lees with regular bâtonnage.
