
LIBROM Nashi / Pear
Fukuoka rice and Kunisaki-grown pear, fermented together into a 9% ABV craft sake.

A defined expression of the range
LIBROM Nashi / Pear is brewed from Fukuoka-grown rice and Japanese pears grown by SUN Marché in Kunisaki, Oita. Rather than blending juice into finished sake, the pears are added directly to the fermenting moromi — their sugar taken up by the yeast itself, so the pear’s aroma and the rice’s flavor don’t sit apart, but come together as one sake.
The kake-mai (non-koji rice) is polished to 92%, keeping much of the rice’s own umami intact alongside the pear’s delicate sweetness and lightness. Classified not as seishu but as “other brewed alcohol” (sonota no jozoshu), it is bottled at 500 ml and 9% ABV.
How it tastes

A fresh aroma recalls freshly picked Japanese pear. The palate is smooth, with a delicate sweetness spreading gently, and the finish stays light — clean and cool with the fruit’s freshness, never heavy.
Keep refrigerated. The pear’s clean, cool freshness carries through to the finish.

LIBROM is an urban craft sake brewery with its brewery and pub in Fukuoka City’s Chuo Ward. The company was founded in 2020, and the brewery opened in 2021. Founders Mitsuhito Yagyu and Shunpei Anami layer fruit and botanicals onto rice-and-koji fermentation, exploring new expressions of sake.
The name LIBROM comes from the Italian Libertà (freedom) and Romanzo (story) — brewing freely, and making sake that tells its own story.
