NISEKO Ohoro Gin
Niseko-grown sweet gale and Japanese mint, thirteen botanicals and snowmelt-soft water shape a clear, firm classic gin with light citrus lift.
Classic gin first; Niseko terroir as a precise accent.
Juniper, coriander, angelica, orris, liquorice and chamomile build the frame. Five citrus fruits add lift, while local sweet gale and Japanese mint bring resin, wood and cool herbal freshness.
A hybrid still separates weight from delicacy, then time brings them together.
One-day maceration
Botanicals rest in the base spirit before distillation the following day.
Arnold Holstein hybrid
Pot and column functions handle resinous and volatile botanicals with control.
Three-week marriage
The distillate rests before bottling, completing a process of about one month.
Clean and smooth, with a firm core and light citrus aroma.

Juniper leads with resinous, woody freshness, supported by citrus and garden herbs. The palate is firm and gently bitter, while Niseko's soft water keeps the 47% structure remarkably smooth. The finish is clean, dry and cooling.
Built for classic cocktails, complete enough to drink simply.
The firm juniper core and 47% structure remain exact with vermouth.
A neutral tonic reveals citrus, mint and sweet gale without masking them.
Lime follows the five-citrus architecture while the dry core stays intact.

Niseko’s water and botanicals point toward food
The food affinities for NISEKO Ohoro Gin are not combinations officially presented by the distillery, but a reading drawn from the characteristics recorded on this page. Built around the resinous, wood-toned juniper structure, the lift of five citrus fruits, the cool herbal freshness of Niseko-grown sweet gale and Japanese mint, and the smoothness brought by Niseko’s snowmelt-soft water, they are organised into four directions.
These suggestions are a hypothesis built on structural cues drawn from food-pairing theory — overlapping aroma families creating synergy, matching the smoothness of the spirit to the delicacy of a dish, and cooling aromas sitting alongside one another — and are not an official recommendation from the distillery.
Classic gin, defined by Niseko botanicals and snowmelt-soft water.
Niseko Distillery was established by the Hakkaisan group in Hokkaido. The name ohoro means 'to continue' in the Ainu language, expressing a wish for the spirit to endure across generations.
