Côte de Nuits-Villages · Comblanchien
DOMAINE DECELLE & FILSCôte de Nuits-Villages « La Berchère »
Comblanchien is better known for the pale limestone quarried from its hillsides than for its vines — yet part of La Berchère grows on exactly that reclaimed quarry ground, giving this Côte de Nuits-Villages Pinot Noir a warmth and depth shaped by stone as much as soil.

The Estate and the Parcel
Domaine Decelle & Fils, founded in 2008 and formerly known as Decelle-Villa, farms eight hectares around Nuits-Saint-Georges that have been converted to organic viticulture.
La Berchère is a single parcel within the Côte de Nuits-Villages appellation, located in Comblanchien — a commune historically known for its stone quarries — with part of the vines planted on former quarry ground.

Temperature
Serving temperature: around 14–16°C (practical range; official Burgundy guidance suggests 13–14°C).
Timing
Estimated drinking window: 2026–2034, with an estimated peak around 2027–2031; young examples show well with around 60–90 minutes of aeration.
Glassware
A large-bowled Burgundy glass, such as Zalto or Riedel Sommeliers Burgundy, suits its structure.
At the table
The wine's ripe fruit core and powerful, fleshy structure call for dishes with body and gentle spice rather than sharp acidity or intense chili heat.
Across cuisines, the pairing logic favours richness and moderate seasoning: grilled or braised proteins with natural sweetness or umami echo the wine's ripe fruit, while dishes built on strong chili, lime or very sweet glazes tend to overwhelm its structure.
Japanese
- Sukiyaki with a light broth
- Wagyu steak
- Maguro akami zuke (marinated lean tuna)
Why it worksThe savoury-sweet balance of sukiyaki and the umami of grilled wagyu echo the wine's ripe fruit and fleshy palate, while lean marinated tuna offers a clean protein counterpoint without competing acidity.
Thai
- Mild Massaman beef curry
- Northern Thai sai oua sausage (light spice)
- Khao soi with chicken (mild version)
Why it worksThese dishes carry warm spice and coconut or herbal richness rather than sharp chili or lime, allowing the wine's fruit and structure to stay in balance; very spicy or sour Thai dishes are best avoided.
Western
- Beef fillet
- Côte de boeuf
- Duck magret
Why it worksClassic Burgundian pairings of red meat and duck match the wine's power and fleshy texture, with the fat and protein softening its firm structure.

Winemaking
Grapes are hand-harvested in small crates and sorted on a table before full destemming. Fermentation proceeds with indigenous yeasts and manual pigeage, followed by spontaneous malolactic fermentation in barrel and twelve months of ageing in 228-litre French oak, about one-third new.
Product detail
Bottled at 750 mL under natural cork; the estate's vines are certified organic (AB).
Comblanchien and La Berchère
The former quarry ground within the parcel creates a warmer microclimate, which the estate associates with easier ripening in this otherwise cool, limestone-based appellation.
