Classic pairings: oysters, caviar, shellfish, raw or grilled seafood, white fish, young cheeses and delicate poultry. Japanese cuisine: sushi, sashimi, tempura, grilled sea bream, crab, scallop and yuzu-ponzu dishes; the bright acidity keeps seafood clean. Thai cuisine: steamed or grilled prawns, pla kapong neung manao, mild seafood salad and lemongrass-forward dishes; keep chili moderate to protect the wine’s mineral finish.

Vinification

Manual harvesting. Minimum aging 24 months on slats. Release at least 2 months after disgorgement.
