A small-format Junmai shaped by the snowbound highlands of Iinan, Shimane.

A quiet Junmai from the snowbound highlands
KINU NO MINE Junmai is brewed by Akana Brewery in Iinan, Shimane, a mountain town resting at approximately 450 metres above sea level. Presented in an elegant 300 ml format, it carries the intimate scale of its birthplace. The name KINU NO MINE evokes the silken stillness of snow and the mountain ridges surrounding the brewery.
A restrained, rice-led profile

Its Junmai character suggests a composed expression centred on rice, gentle umami and a clean finish. Chilled service lends clarity; allowing the sake to move towards room temperature reveals a softer and more rounded presence.
Begin chilled or at room temperature, then adjust with the character of the dish.
A brewery restored by the will of its town
Akana Brewery was formed in the late 1920s through the union of three small breweries in Iinan. When declining production later placed it at risk of closure, local residents rallied to preserve the town’s brewing heritage.
Supported by community signatures and local government, the brewery began a new chapter. Today, brewer Takaaki Mishima carries the craft forward, preserving the historic chimney and broad roof while refining the brewery within. Each small bottle quietly reflects that continuity.
At the table
Its poised Junmai structure belongs naturally beside dishes of measured intensity—dashi, soy, white fish and vegetables—where texture and savoury depth can meet without excess.
