About the Wine

Domaine Le Sang des Cailloux is based in Sarrians, in the southern Rhône appellation of Vacqueyras. Most of the estate's vines are red varieties, but a sandy plot known as Safres, on the Plateau des Garrigues, is set aside for white grapes.

Un Sang Blanc is the cuvée built from that plot: six white varieties — Clairette, Grenache Blanc, Bourboulenc, Roussanne, Marsanne and Viognier — co-planted, harvested together and fermented as a single field blend.

Taste profile

In the glass

Honey, toast, peach, apricot and white flowers, layered through extended barrel aging

A rich, textural palate (gras) balanced by fine, precise acidity

Before it reaches the glass

01

Temperature

10–12°C, slightly warmer than typical for a white wine, so the barrel-derived aromas open without the texture turning rigid

02

Timing

Best experienced within its 2025–2031 window, following four to six years of bottle age for full harmony

Glassware

At the table

The wine's oak-derived texture and layered aromatics suit the fat and cream found across Japanese, Thai and Western cooking.

Its combination of weight and precise acidity lets it stand up to butter- and cream-based dishes, as well as the coconut-milk sauces typical of Thai cooking, without one element overpowering the other.

Japanese

  • Fatty white fish such as amberjack (buri)
  • Butter-grilled scallops and prawns
  • Salt-seasoned tempura

Why it worksThe wine's rich texture meets the natural fat of the fish and butter, while its precise acidity refreshes the palate after salt-forward tempura.

Thai

  • Seafood massaman curry
  • Mild green curry
  • Tom kha gai

Why it worksCoconut-based sauces call for a wine with enough weight to match their richness; the wine's texture and aromatic complexity hold their own against these mild, creamy dishes.

Western

  • Seared foie gras
  • Veal in cream sauce
  • Lobster with beurre blanc

Why it worksClassic French preparations built on butter and cream find a natural counterpart in the wine's own textural richness and barrel-derived depth.

Winemaking

Hand-harvested grapes are pressed directly without destemming, then fermented with wild yeast in 450-litre oak barrels over four to five weeks. Batonnage keeps the wine in contact with its lees through malolactic fermentation and twelve months of aging, before bottling unfined and unfiltered.

Product detail

The wine comes from a one-hectare sandy Safres parcel on the Plateau des Garrigues, planted with vines aged ten to twenty years, combining six white varieties as a single co-planted field blend.
