About Domaine Gauby
Domaine Gauby is a Roussillon estate based in Calce, farmed organically and biodynamically since its founding in 1985, first under Gérard Gauby and, since 2008, under his son Lionel, who continues a low-intervention approach across the property.
Les Calcinaires Rouge sits within the estate's entry-to-mid range, distinct from the higher Vieilles Vignes and Muntada cuvées. The 2023 blend is Syrah, Mourvèdre, Grenache and Carignan, aged in concrete tanks and old foudres before bottling.

A large-bowled Burgundy glass, or a wide glass suited to Grenache-based reds.
At the table
Grown for freshness rather than power, this Roussillon red pairs well with dishes that favor lightness and aromatic lift over heaviness or intense heat.
Because the wine leans delicate and floral rather than bold, it works best alongside dishes that avoid heavy fat or strong chili heat, letting its structure and aromatics come through.
Japanese
- Kamo roosu (sliced roast duck)
- Maguro akami (lean tuna sashimi)
- Aigamo nimono (duck simmered in dashi)
Why it worksDashi-forward, lean preparations echo the wine's lighter structure without the fat or heaviness that would overwhelm its delicate profile.
Thai
- Gai yang (northern Thai grilled chicken, light sauce)
- Duck with mild tamarind sauce
- Modern French-Thai fusion dishes
Why it worksMilder, less chili-forward Thai preparations suit the wine's delicate character better than dishes built around intense heat or heavy sweetness.
Western
- Roast lamb with rosemary
- Mushroom risotto or sautéed girolles
- Aged Comté or Tomme des Pyrénées
Why it worksClassic Mediterranean herb and mushroom flavors sit naturally alongside the wine's floral aromatics and its Roussillon origin.
From cellar to bottle
Winemaking
Fermentation uses only indigenous yeast, with no added sugar, acid or enzymes. The wine ages in concrete tanks and old wooden foudres, with no new oak, before being left unfined and unfiltered and bottled by gravity.
