About the Domaine and the Wine

Domaine Xavier & Agnès Amirault is a six-generation family estate based in Saint-Nicolas-de-Bourgueil, in the Loire Valley's Touraine region, where the family farms Cabernet Franc and Chenin Blanc across a range of parcels.

La Ferme des Fontaines Blanc comes from Chenin Blanc grown in the neighbouring Anjou appellation area and is bottled as AOC Anjou Blanc, part of a series carrying the Vin Méthode Nature <30 mg/L label.

Taste profile

In the glass

Pear, apple, citrus peel and a hint of minerality

Dry and softly acidic, with a creamy, yogurt-like finish shaped by lees ageing

Before it reaches the glass

01

Temperature

10–12°C; serving it too cold can mute the aromatics and accentuate reduction.

02

Timing

Drinking window 2026–2029, suited to near-to-mid-term drinking.

03

Glassware

A Burgundy-style white wine glass or a glass suited to dry Chenin Blanc.

At the table

This dry, lees-textured Chenin Blanc pairs naturally with light, citrus- or mineral-forward dishes across several culinary traditions.

Its combination of crisp acidity, soft creaminess and completely dry structure works best alongside preparations that avoid heavy spice, strong acidity or richness that could overwhelm its texture.

Japanese

  • Shio-yaki grilled white fish
  • Uni gunkan-maki
  • White fish carpaccio with olive oil and yuzu

Why it worksThe wine's citrus peel and mineral notes echo the clean, salt-forward seasoning of grilled and raw white fish, while its creamy lees texture complements the richness of sea urchin.

Thai

  • Pla neung see-ew (steamed fish in light soy)
  • Yam talay (mild seafood salad)
  • Tod man goong (shrimp cakes)

Why it worksMild, light-seasoned Thai seafood dishes—without heavy chili or coconut milk—let the wine's acidity and texture come through rather than compete with the dish.

Western

  • Aged goat cheese (Crottin de Chavignol or Sainte-Maure de Touraine)
  • Grilled white fish
  • Seared scallops in lemon cream sauce

Why it worksThis is a classic Loire pairing: the tang of aged goat cheese and the citrus-cream notes of scallop preparations mirror the wine's own citrus character and creamy finish.

Pairing guide — Wine

From cellar to bottle

Winemaking

Chenin Blanc ferments spontaneously with native yeasts in stainless steel tanks, then rests roughly nine months sur lie with light racking before an unfiltered bottling; the creamy texture in the finish reflects this lees contact.
