Prestige de Constance Extra-Brut 2020 is a Blanc de Noirs from Pinot Noir vines averaging about forty years in the La Grande Côte lieu-dit. It is certified organic, dosed at 4 g/L and bottled with total SO₂ measured at 0 mg/L.

Traditional-method secondary fermentation and at least 30 months on lees give breadth and fine mousse. Pear, plum, black cherry and brioche meet a focused acid line and the saline mineral character of Molesme’s Kimmeridgian clay-limestone soils.

Taste profile

In the glass

Pear, plum and black cherry are layered with fresh brioche and bread dough; faint smoke and raw cocoa appear as the wine opens.

Acid-driven and precise. Generous fruit remains light on its feet, leading through saline minerality to a long, integrated and refined finish.

Pale, luminous gold, with a steady, fine bead despite its Pinot Noir origin.

Temperature

Serve at 10–12°C. A little more warmth than standard Crémant reveals the fruit, brioche and saline detail.

Timing

Enjoy from 2026 to 2032, with a likely peak around 2027–2030. No decanting is required; allow about 30 minutes in the glass for reductive notes to lift.

Glassware

Choose a generous tulip-shaped white-wine glass. A narrow flute limits both oxygen contact and aromatic development.

At the table

Focused acidity, saline minerality, fine mousse and mature lees-derived depth make this a sparkling wine for the table, not only for a toast.

The wine’s low dosage and salt-edged acidity refresh shellfish, fried textures and rich sauces. Brioche, smoke and cocoa tones create bridges to roast poultry, mushrooms, aged cheese and savoury preparations.

From cellar to bottle

Winemaking

Hand-harvested Pinot Noir is fermented with indigenous yeasts in old French oak casks. Secondary fermentation takes place in bottle, followed by at least 30 months on lees. No SO₂ is added at disgorgement.

Although the estate was founded in 2011, the Pinot Noir vines in La Grande Côte were already established; their average age is about forty years. Founded by Bruno Dangin and now run with his son Matthieu, the estate lies three kilometres south of the Champagne boundary on Kimmeridgian clay-limestone continuous with the Côte des Bar.
