From field to bottle

Small-batch distillation that keeps the cane's weight.

01

Harvest and press

Cane is hand-cut and the first juice is taken without dilution.

02

Ferment

Wine yeast ferments the fresh juice for approximately 72–96 hours.

03

Kabuto-kama distillation

A 200-litre Japanese-style pot still concentrates aroma and texture one batch at a time.

Inside the glass

High-proof clarity with fruit, creaminess and a mineral edge.

LAODI 56k White Rhum sensory profile

Lemongrass, white grape, pear and apple rise above a full, creamy body. Citrus and a lightly saline mineral line keep the long cane-sweet finish precise.

How to serve

Keep the service simple enough to show the distillate.

Neat

The producer's first recommendation; use a small tulip-shaped glass.

A few drops of water

A little water relaxes the 56% structure and releases fruit.

After dinner

Serve in a measured pour and let it warm gradually in the glass.

Food affinities

Concentration and a mineral edge from a high proof, in four directions

The food affinities for LAODI 56k White Rhum are not combinations officially presented by the producer, but a reading drawn from the characteristics recorded on this page. Built around the concentrated texture and the lemongrass and lightly saline mineral edge that come from small-batch kabuto-kama pot-still distillation and the higher 56% proof, they are organised into four directions.

Lemongrass aroma meeting herb-forward dishesSalt-grilled ayu (sweetfish), tom yum goong, herb salad with a lemongrass vinaigrette. The lemongrass-like aroma overlaps directly with the aroma of herb-forward dishes.
Saline minerality alongside the salinity of seafoodOysters with vinegar dressing (sunomono), yam talay (Thai seafood salad), raw oysters with mignonette. The lightly saline mineral edge sits alongside the natural salinity of seafood, matching in character.
Pear and apple aroma meeting light baked sweetsStewed apple compote, kanom krok (coconut griddle cakes), apple tart. The aroma reminiscent of pear and apple overlaps with the aroma of light baked sweets.
A concentrated, high-proof texture holding its own against charcoal-grilled foodCharcoal-grilled yakitori, gai yang (Thai charcoal-grilled chicken), barbecue ribs. The concentrated texture built by the 56% proof keeps its outline clear against the char of grilled food.

Food-pairing theory notes that ingredients with strong aromas of the same type sharpen each other’s outline when layered together. These suggestions are a hypothesis built on that structural cue, and are not an official recommendation from the producer
