About the Wine

Domaine de Cazaban farms this cuvée from a limestone parcel in Montolieu, on the southern edge of the Montagne Noire near Carcassonne. Parti Pris is released under IGP Pays d'Aude and built from 100% Pinot Noir, a variety chosen deliberately for this particular site.

The winemaking follows a gentle, hands-off approach: partial whole-cluster fermentation, gravity movement, native yeasts, and aging in Stockinger demi-muid barrels, resulting in a wine certified Vin Méthode Nature.

At the table

This wine pairs well with delicate, herb-forward dishes, provided the preparation stays light rather than heavily spiced or charred.

Because structure remains soft and fruit stays fresh, dishes with bold spice or heavy char can overwhelm it; the better matches lean into umami, fresh herbs and light sauces.

Japanese

  • Duck roast with a light tare glaze
  • Chicken jibuni
  • Lightly marinated tuna (zuke)

Why it worksThe wine's delicate red fruit and soft tannins sit comfortably alongside these umami-forward, gently seasoned preparations without overpowering them.

Thai

  • Gai yang (mild grilled chicken)
  • Moo nam tok (mild herb salad)
  • Larb gai (mild version)

Why it worksHerb-driven, lightly seasoned Thai dishes echo the wine's fresh fruit character; very spicy preparations are best avoided as they can overwhelm its structure.

Western

  • Fresh goat cheese
  • Salmon gravlax with herbs
  • Poultry in a light sauce

Why it worksThese pairings suit the wine's balanced structure and soft tannins, matching fresh, delicate flavors.

Winemaking

Grapes are vinified with roughly half whole clusters and half destemmed fruit, moved by gravity rather than pumping, and macerated for about eight days to preserve delicacy before aging in Stockinger demi-muid barrels.

Product detail

Fermentation proceeds spontaneously with native yeasts; the wine is unfined, unfiltered, bottled at the end of April, and carries Vin Méthode Nature certification with no added sulphites and residual sugar under 1 g/L.
