Pairing

Roasted or grilled meats, mushrooms, savoury dishes and mature cheeses. Japanese cuisine: lean Wagyu steak, lightly sweetened sukiyaki, beef shigureni and duck roast. Thai cuisine: mild Massaman beef curry, mu yang, braised beef and dishes with a rich demi-glace-style sauce.

"I am attached to the roots of the past, but looking to the future, in line with the generations that preceded me. I explore new interpretations of the terroir, favoring finesse, elegance and drinkability with a reduced breeding and consisting of only 25% of new wood perfectly integrated and controlled. A balanced wine between a complex slightly spicy nose, a crunchy fruit and a velvety palate, melted tannins. The promise of a wine both ready to drink on the youth and endowed with a formidable potential of guard.
