About the Wine
Domaine Le Sang des Cailloux is based in Sarrians, in the southern Rhône appellation of Vacqueyras. Most of the estate's vines are red varieties, but a sandy plot known as Safres, on the Plateau des Garrigues, is set aside for white grapes.
Un Sang Blanc is the cuvée built from that plot: six white varieties — Clairette, Grenache Blanc, Bourboulenc, Roussanne, Marsanne and Viognier — co-planted, harvested together and fermented as a single field blend.

From cellar to bottle
Winemaking
Hand-harvested grapes are pressed directly without destemming, then fermented with wild yeast in 450-litre oak barrels over four to five weeks. Batonnage keeps the wine in contact with its lees through malolactic fermentation and twelve months of aging, before bottling unfined and unfiltered.
Product detail
The wine comes from a one-hectare sandy Safres parcel on the Plateau des Garrigues, planted with vines aged ten to twenty years, combining six white varieties as a single co-planted field blend.
Origin
The sandy Safres soils of this parcel are associated with fine mineral character, lively acidity and a long finish in Vacqueyras whites, offsetting the fuller body more typical of southern Rhône white wine.
