About This Wine
Domaine Gauby farms hillside vineyards above the village of Calce, in the Roussillon, on schist, limestone and marl soils at 150–300 metres, following the estate's biodynamic practices with capped yields.
The 2021 vintage followed an early spring frost and a notably dry summer, producing a wine defined by balance rather than concentration. It is fermented spontaneously with native yeasts, aged in cement tank and older wood — 500-litre barrels and large foudres — then bottled unfined and unfiltered by gravity.

Winemaking
Grapes are hand-harvested and sorted before fermenting spontaneously with native yeasts; no chaptalization or acid addition is used. The wine ages in cement tank and older wood, including 500-litre barrels and large foudres, on an estate farmed under biodynamic practices with yields kept around 20 hectolitres per hectare or below.
Product detail
The wine is bottled unfined and unfiltered, with minimal sulphur, using a gravity-fed bottling process. Beyond the standard 750 ml bottle, magnum and jeroboam formats are also produced.
Origin
The vineyards rise on schist and limestone-marl hillsides above Calce, inland from the Mediterranean coast, where strong winds and low rainfall define the growing environment.
