About the Wine

Domaine Gruhier is based at the Abbaye du Petit Quincy, a historic building in the village of Épineuil in northern Burgundy. Dominique Gruhier took over the vineyard in 1990 and has since deepened a commitment to natural, low-intervention winemaking.

Bourgogne Tonnerre is a dry white wine grown on the same Kimmeridgian limestone as Chablis. Spontaneous fermentation with native yeasts and aging split between stainless steel and used oak barrels preserve the purity of the fruit while adding gentle complexity.

Made entirely from Chardonnay grown on Kimmeridgian limestone shared with Chablis.Vines average around 40 years of age.Fermented spontaneously with native yeasts, then aged ten months across stainless steel (70%) and used oak barrels (30%).Blended and rested a further six months in stainless steel before bottling.Bottled with a low total SO2 of 35–45 ppm.

Vivid notes of exotic fruit salad, pineapple with a touch of citrus, yellow apple, ripe pear and quince, opening later to cuckoo-flower blossom, soft vanilla, light wood and a hint of white chocolate.

Rich and generous, with a supple, creamy texture balanced by lively acidity; oak-derived roundness meets sharp Kimmeridgian minerality and a saline, elegant, lingering finish.

Pale, bright straw-yellow with medium viscosity.

Winemaking

Chardonnay is pressed slowly and settled in tank for 12 to 24 hours without additives before spontaneous fermentation begins with native yeasts; the wine then ages for ten months split between stainless steel (70%) and used oak barrels (30%).

Product detail

After blending, the wine rests a further six months in stainless steel. Vines average around 40 years old, the wine falls under the AOC Bourgogne Tonnerre appellation established in 2006, and total SO2 at bottling is kept to a low 35–45 ppm.
