Colour

Bright ruby red.

Fragrance

Fresh cherry, cassis and rose petal, with a saline, lightly earthy mineral note.

Taste

Dry and elegant. Linear acidity lifts pure red fruit; fine tannin and a light-to-medium body lead to a cool, saline finish.

Pairing

Roasted or grilled meats, mushrooms, savoury dishes and mature cheeses. Japanese cuisine: duck roast, yakitori with tare, beef tataki and mushroom sukiyaki. Thai cuisine: charcoal-grilled pork or chicken, a mild duck curry, mushroom stir-fry and a light Massaman curry.

Vinification

Pinot Noir from 40-year-old vines on Kimmeridgian limestone. Ecocert organic since 2015. Twenty percent whole cluster, 20-day stainless-steel maceration without additives, followed by ageing in 228 L Burgundy barrels with only 5% new Troncais oak.
