DAVID FAGOTPouilly-Fuissé 1er Cru 2021
In 2020, twenty-two climats of Pouilly-Fuissé were named Premier Cru for the first time in the appellation's history — a turning point for the Mâconnais. David Fagot's 2021 release arrives early in that new chapter, shaped by an estate that tends its vines with herbal treatments and works the cellar in step with the lunar calendar.

About the Producer
David Fagot founded his eponymous domaine in 2001 in the village of Fuissé, in the heart of the Mâconnais. Alongside a tasting room open to visitors, he built a reputation for precise, Chardonnay-focused white wines.
In the vineyard, herbal treatments support the vines' natural resistance, and cellar work such as racking and bottling follows the lunar calendar. The 2021 vintage follows directly on from 2020, the year that saw 22 climats of Pouilly-Fuissé promoted to Premier Cru for the first time.

BG wine structure estimate
Comparative profile within the Bacchus Global wine range.
Ripe green fruit and yellow apple lead into white peach and apricot, lifted by ripe citrus notes of grapefruit and lemon.
Soft, limestone-driven minerality underpins light butter, toast, and hazelnut notes from oak aging, with strong concentration, lively acidity, and a long finish.

Serve starting at 11°C, letting it open gradually toward 13°C in the glass.
Timing
The 2021 vintage's concentration and lively acidity reflect the structured, age-worthy character typical of the year.

At the table
The wine's rich, mineral-driven structure carries across Japanese, Thai, and Western dishes with buttery or nutty character.
Barrel-derived butter and hazelnut notes, framed by bright acidity, favor dishes built on cream, butter, or nutty flavors, while the acidity keeps richer preparations in balance.
Japanese
- Butter-seared scallops
- Ebi tempura
- Chawanmushi (savory egg custard)
Why it worksButter-seared seafood and silky egg custard echo the wine's light butter and hazelnut notes, while its acidity keeps the pairing from feeling heavy.
Thai
- Tom kha gai (coconut chicken soup)
- Kai med mamuang (cashew chicken)
- Green curry with chicken
Why it worksCoconut cream and nutty, gently spiced dishes align with the wine's buttery, hazelnut character, while its acidity balances richness and mild heat.
Western
- Butter-poached lobster
- Roast chicken in cream sauce
- Veal in cream sauce
Why it worksClassic butter-and-cream preparations of poultry, veal, and shellfish mirror the wine's own oak-derived butter and hazelnut notes, with its concentration and acidity providing lift.
From cellar to bottle
Winemaking
Malolactic fermentation is evident in the wine's light butter notes, while aging in French oak contributes toast and hazelnut nuances. In the vineyard, the estate applies herbal treatments and follows a lunar calendar for cellar work, an approach used across the domaine.
