The design

Junmai sake casks bridge aroma and acidity.

Togouchi blended whisky is finished for about three months in casks used for the house's Junmai sake. The result is not sake flavour as such, but a lift of fruit, white-wine-like acidity and a gently koji-like finish.

01

Togouchi base

A light malt-and-grain blend leaves space for the delicate cask influence.

02

House Junmai casks

The whisky spends about three months in casks used for the producer's Junmai sake.

03

Fruit and acidity

Melon and Muscat-like sweetness is balanced by white-wine-like acidity.

Taste profile

From green apple to white grape, carried by bright acidity.

TOGOUCHI Whisky Sake Cask Finish sensory profile

02

A few drops of water

A little water opens the layers and settles the sweet-bitter balance.

03

Highball

Soda gives the distinctive finish a brighter, more refreshing shape.

Food affinities

Along the white-wine-like acidity and a koji-like finish

The finish in the house’s own Junmai sake casks is explained on this page, but no food pairing is stated. The four directions below are read from the recorded aroma and taste structure. Two threads run through it: a run of fruit from green apple through melon, muscat and white grape, and a white-wine-like acidity together with a koji-like finish that places it in the same lineage as fermentation-derived ingredients.

Green apple and gentle spiceGinger pork, larb, pork rillettes. The spice aroma of ginger and herbs runs in the same direction as the green apple note.
Melon and muscat sweetnessKombu-cured white fish, green mango salad, melon and prosciutto starter. Fruit sweetness and the umami of kombu or cured ham sit in the same direction.
White-wine-like acidityCucumber and wakame in vinegar dressing, grilled fish with dipping sauce, grilled scallops with lemon butter. The acidity of a side dish or citrus sauce runs in the same direction.
A koji-like finishGrated daikon with nameko mushroom, rice noodles with fish curry, aged cheddar cheese. The fermented depth and umami of these dishes sit in the same lineage as the koji-like finish.

Food-pairing literature describes how fermentation-derived aromas and umami tend to connect with ingredients from the same fermentation lineage. The koji-like finish left by the Junmai sake cask tends to run in the same direction as fermented foods and aged cheese.
