Absinthe L'Entêté (Traditionelle / Traditional) is produced at Distillerie Combier in Saumur, Loire Valley, and was created by Franck Choisne in 2012, after legal efforts restored the right to use absinthe and Provence fennel in France. It is a traditional French absinthe profile made with nine botanicals, a dry finish, and a fresh green character. Best served as a classic absinthe drip with chilled water in a 3:5 ratio, no sugar.
Culinary affinity: Works best as a bitter-sweet aromatic amplifier: traditional absinthe service, herbal-forward cocktails such as Absinthe Mule or Corpse Reviver No.2, and dessert pairings like French macarons, fruit daifuku, or coconut-leaning Thai sweets.
