Zero dosage, built for balance rather than severity.
After an early trial proved too austere, Bruno and Alice Paillard rebuilt the idea around ripe Meunier, old barrels and a dedicated perpetual reserve begun in 2008. Dosage Zero was released in 2018 after roughly two decades of development.
Half of the blend is reserve wine and about half of the base wine ferments in older oak. With no sugar added at dosage, fruit, texture and long lees ageing must carry the balance.

Enjoy at 8–10°C; over-chilling hides toast, spice and the texture that keeps the wine balanced.

Use a tulip-shaped Champagne or quality white-wine glass. Keep the UV-protective wrap on until service.
At the table
Bone-dry acidity and salinity place this Champagne at the table, especially beside oysters and fresh white fish.
The absence of dosage sharpens mineral contrast; Meunier fruit prevents the wine from becoming severe and connects with herbs and lightly sweet shellfish.

Winemaking
First-press juice from more than 30 crus. About half is fermented in older oak, with a dedicated perpetual reserve forming 50% of the blend.
Product detail
Three to four years on lees, at least six months after disgorgement and no dosage. Certified-organic status is recorded for this cuvée.
