About the Wine

Domaine Decelle & Fils was founded in 2008–2009 by Olivier Decelle together with Pierre-Jean Villa in Nuits-Saint-Georges, combining négociant sourcing with estate-grown fruit across the Côte de Beaune and the Hautes-Côtes.

Les Champlains is a single lieu-dit on the upper slopes of Savigny-lès-Beaune, planted entirely to Chardonnay, fermented with indigenous yeasts in 500-litre oak demi-muids and aged around twelve months before bottling.

Before it reaches the glass

01

Temperature

Serve at 10–12°C, using an ice bucket to maintain temperature in warmer climates.

02

Timing

Enjoy according to bottle condition.

03

Glassware

A medium-bowl Chardonnay glass (roughly 500 ml) suits the wine; avoid oversized Montrachet-style bowls, which can scatter its oak-derived aromatics.

At the table

The wine's floral, honeyed fruit and moderate acidity give it range across different culinary traditions.

Its balance of richness, freshness and mineral tension tends to echo natural sweetness and gentle spice rather than intense heat, so it pairs most comfortably with dishes of moderate, layered flavour.

Japanese

  • White-fish sashimi
  • Scallop sushi
  • Tempura (white fish and vegetables)

Why it worksThe honeyed, floral aromatics echo the natural sweetness of shellfish and white fish, while the wine's freshness lightens the richness of a tempura batter.

Thai

  • Poo phad pong karee (crab in yellow curry)
  • Pla kapong neung manao (steamed sea bass with lime)
  • Tom kha gai (coconut-galangal soup)

Why it worksCoconut and turmeric notes sit comfortably alongside the wine's honeyed fruit and oak-derived richness, while lime-forward dishes echo its own freshness; very fiery preparations are better matched elsewhere given the vintage's softer acidity.

Western

  • Rabbit fillet with mustard
  • Pork tenderloin with maple syrup
  • A semi-firm cheese such as Cantal

Why it worksThe wine's oak-aged richness and floral honey notes complement the sweetness of a maple glaze and the depth of a mustard sauce, while its structure holds its own against a firmer cheese.

Winemaking

Grapes are picked by hand into small crates, gently pneumatic-pressed, then fermented with indigenous yeasts in 500-litre oak demi-muids and aged for about twelve months before bottling the following spring or summer.
