About the Wine

La Fourchaume is Chablis's largest premier cru, stretching along the right bank of the Serein next to the grand cru hillside to the north. Its Kimmeridgian limestone soils and mix of exposures have long made it a benchmark among the appellation's climats.

This cuvée is grown on a 1.27-hectare plot assembled from three adjoining parcels planted in 1986, 1992 and 2017, facing west, on Kimmeridgian limestone soil typical of the climat. The fruit is picked entirely by hand from Ecocert-certified organic vines.

From cellar to bottle

Winemaking

Grapes are pressed gently, then settled by gravity into stainless steel at 10°C for 24 to 36 hours before fermentation begins with indigenous yeasts started from a pied de cuve; no chaptalization is used. The wine ages on its lees for up to eighteen months in a combination of stainless steel and neutral, previously used French oak, undergoes malolactic fermentation naturally, and is bottled without fining, after only light filtration and a minimal addition of sulphur.
