Food affinities

Vivid acidity and ripe sweetness, in four directions

The food affinities for LAODI Passion Fruit are not combinations officially presented by the producer, but a reading drawn from the characteristics recorded on this page. Built around the contrast between the vivid acidity and the rich, rounded sweetness that the Bolaven Plateau passion fruit brings, they are organised into four directions.

Vivid acidity meeting the richness of seafoodKelp-cured white fish (kobujime), pla neung manao (steamed fish with lime), shrimp ceviche. The vivid acidity from the passion fruit works to lighten the richness of seafood, in a way close to a cutting effect.
Ripe fruit sweetness aligning with fruit-forward dessertsMango warabimochi, tub tim krob (water chestnut in coconut milk), passion fruit cream pavlova. The dense, ripe-fruit sweetness sits naturally alongside desserts built around other fruit.
Rich sweetness offsetting fried richnessFried scallop fritto, popia tod (Thai fried spring rolls), fish croquette. The rich sweetness and acidity contrast with the oil of fried food, lightening the aftertaste.
Tropical aroma echoing citrus and floral notesCitrus and herb salad, som tam (green papaya salad), goat cheese and pear salad. The bright tropical aroma of passion fruit runs in the same direction as citrus and herbal aromas, sharpening in outline when layered together.

These suggestions are a hypothesis built on structural cues drawn from food-pairing theory — acidity suppressing richness, and the synergy created by shared aromatic notes — and are not an official recommendation from the producer
