DOMAINE DE VILLAINEBourgogne Rouge 2021

In 2021, a spring frost forced Domaine de Villaine to set aside single-vineyard bottling for its finest red parcels — La Digoine, La Fortune, Mercurey Les Montots and Santenay 1er Cru Passetemps — and gather them instead into one Bourgogne Rouge. The result carries an echo of terroirs usually kept apart.

About This Wine

Domaine de Villaine, based in Bouzeron and Rully in Burgundy's Côte Chalonnaise, has farmed organically since 1986, gaining Qualité France certification in 1997.

Pierre de Benoist, who has directed the estate since 2000, guided the 2021 red-wine harvest through a season of significant frost losses across the estate's parcels.

The 2021 Bourgogne Rouge blends four parcels usually bottled separately: La Digoine, La Fortune, Mercurey Les Montots and Santenay 1er Cru Passetemps.Spring frost reduced typical production from these red parcels from about twenty barrels to six in this vintage.Made from 100% Pinot Noir, hand-harvested and fermented with indigenous yeast.Bottled unfiltered, with minimal new oak in keeping with estate practice.

Taste profile

In the glass

Fresh at first, opening into vivid fruit character with a little air in the glass.

Fresh fruit flavors with a whisper of stem-derived spice from majority whole-cluster fermentation, balanced by delicate, ripe red fruit.

Timing

Drinking window 2024–2029, with a short 30–60 minute exposure to air recommended to let the fruit open.

03

Glassware

A Burgundy-style glass with a generous bowl, such as a Burgundy Grand Cru shape.

At the table

This Pinot Noir's fresh red fruit and gentle spice call for dishes that let its delicate structure lead, rather than compete with it.

Its silky texture and light whole-cluster spice sit well alongside grilled or roasted proteins where char and umami add contrast without overwhelming the wine; dishes built on heavy chili heat, fish sauce or high acidity tend to mute its finer points.

Japanese

  • Kamo rosu (Japanese-style roast duck)
  • Sukiyaki with a lighter sauce
  • Akami tuna zuke (soy-marinated tuna)

Why it worksThe gentle sweetness of the meat and the umami of soy-based sauces echo the wine's fresh red fruit and light spice.

Thai

  • Moo yang (charcoal-grilled pork)
  • Gai yang (charcoal-grilled chicken)
  • Nuea yang (charcoal-grilled beef)

Why it worksCharcoal aromas and the natural savoriness of grilled meat sit comfortably alongside the wine's fruit and spice without overpowering it.

Western

  • Roast duck breast
  • Roast chicken
  • Charcuterie

Why it worksA classic Burgundy match: red fruit character and fine tannin structure complement the richness of poultry and cured meats.

Winemaking

Hand-harvested grapes were fermented with indigenous yeast, mostly as whole clusters, in keeping with the estate's usual practice of ageing in wood with minimal new oak and bottling without filtration.

Product detail

The 2021 vintage draws together four parcels normally vinified and bottled separately — La Digoine, La Fortune, Mercurey Les Montots and Santenay 1er Cru Passetemps — after spring frost sharply reduced yields across the estate's red vineyards.
