About the Wine

Domaine de Sauzet is run by François Massol in Saint-Bauzille-de-Putois, at the foot of the Grotte des Demoiselles in the Hérault, where the estate farms organically under Label AB certification.

Yin Yang, the estate's flagship cuvée, takes its name from the balance it pursues between Bordeaux varieties and southern French grapes, blended from tank- and barrel-aged components.

From cellar to bottle

Winemaking

Hand- and machine-harvested grapes are fully destemmed and fermented in concrete tank. Each variety — Cabernet Sauvignon, Merlot and Syrah — is aged separately in oak for twelve months before the final blend is assembled from equal parts tank-aged and barrel-aged wine, for a total maturation of fourteen months.

Product detail

Bottlings from late 2025 onward are released without a capsule, left as bare-corked bottles, in line with the estate's environmental practices; the vineyards are farmed organically at estate level under Label AB certification.
