About This Wine

In an appellation known almost entirely for its reds, a parcel of Chardonnay grows high on a stony slope scattered with hand-piled stones, its roots working between the rocks for a tension not typically found on flatter ground nearby.

Domaine Decelle & Fils, founded in 2008 and based in the Nuits-Saint-Georges area, farms across the Côte de Beaune and Côte de Nuits. This cuvée follows the estate's typical winemaking approach, fermented with native yeasts and aged in French oak, carrying the structure of its site through to bottle.

Chardonnay 100%, produced within the Chorey-lès-Beaune appellation, which is planted predominantly to Pinot Noir.Poor, stony limestone soil marked by piles of cleared stones known as meurgersFermentation and aging follow the estate's typical winemaking approach, using native yeasts and maturation in French oak barrels.Domaine Decelle & Fils was founded in 2008 and is based in the Nuits-Saint-Georges area, with a move to Corgoloin underway.Barrel aging continues for up to fourteen months, under a restrained new-oak approach.

Taste profile

In the glass

A wine built on contrast — liveliness meeting roundness, freshness meeting comfort — where the tension of stony soil and the density of ripe fruit settle into balance.

At the table

The wine's structure — bright acidity paired with textural depth from oak aging — pairs naturally across a range of cuisines.

From delicate Japanese seafood to milder Thai preparations and classic French dishes built on butter and fresh cheese, its interplay of tension and roundness adapts across a range of contexts without dominating the plate.

Japanese

  • White fish sashimi
  • Oyster gratin
  • Chawanmushi (savory egg custard)

Why it worksThe wine's citrus-edged acidity mirrors the delicate salinity of raw and lightly cooked seafood, while its barrel-derived texture complements creamy, custard-based preparations.

Thai

  • Pomelo salad with prawns (mild)
  • Steamed sea bass with lime (mild)
  • Tom Kha Gai (mild coconut chicken soup)

Why it worksIts fresh acidity and orchard-fruit character balance the citrus and coconut notes of milder Thai dishes, though very spicy or heavily sweet-sour preparations can overwhelm its structure.

Western

  • Sole meunière
  • Chicken blanquette
  • Fresh goat cheese (Crottin de Chavignol)

Why it worksThe wine's acidity cuts through butter-based sauces and the creaminess of fresh cheese, echoing pairings traditional to its home region.
