About the Wine
La Fourchaume is Chablis's largest premier cru, stretching along the right bank of the Serein next to the grand cru hillside to the north. Its Kimmeridgian limestone soils and mix of exposures have long made it a benchmark among the appellation's climats.
This cuvée is grown on a 1.27-hectare plot assembled from three adjoining parcels planted in 1986, 1992 and 2017, facing west, on Kimmeridgian limestone soil typical of the climat. The fruit is picked entirely by hand from Ecocert-certified organic vines.

At the table
This Chardonnay's texture and structure suit dishes built around delicate seafood, light salt and citrus across several culinary traditions.
The following pairings draw on the wine's fleshy palate and long finish, matching its weight and freshness rather than overpowering the food.
Japanese
- Kombu-cured sea bream (tai no kobujime)
- Salt-grilled white fish (shioyaki)
- Simmered abalone (awabi no nimono)
Why it worksThese preparations lean on delicate umami and light salt, which sit comfortably alongside the wine's ample texture and persistent finish without competing with it.
Thai
- Steamed fish with lime and chili (pla neung manao)
- Prawns with glass noodles (goong ob woonsen)
- Pomelo salad (yum som-o)
Why it worksThe citrus, herb and seafood focus of these dishes calls for a wine with enough freshness and texture to stand alongside bright, aromatic flavors — a role this Chardonnay's structure is suited to.
Western
- Oysters
- Seared scallops
- Grilled white fish
Why it worksClassic partners for Chablis, these dishes' brininess and delicate flesh find a natural counterpart in the wine's fleshy palate and length.
From cellar to bottle
Winemaking
Grapes are pressed gently, then settled by gravity into stainless steel at 10°C for 24 to 36 hours before fermentation begins with indigenous yeasts started from a pied de cuve; no chaptalization is used. The wine ages on its lees for up to eighteen months in a combination of stainless steel and neutral, previously used French oak, undergoes malolactic fermentation naturally, and is bottled without fining, after only light filtration and a minimal addition of sulphur.
