Pairing

Fine Italian charcuterie, sushi, poultry or red fruit salad. Japanese cuisine: white-fish and shellfish sushi, sashimi, tempura with salt and grilled prawns. Thai cuisine: grilled seafood, a mild pomelo-prawn salad, tod mun goong and crisp fried chicken.

Vinification

The blend is composed of reserve wines, 25 vintages, going back to 1985. Three years on the lees, then a minimum of a further five months after disgorgement. Extra-Brut, very low dosage, less than 6g/l. A very pure wine.
