Beautiful exotic nose, lightly apricot style.

Taste

It presents an intense, pure expression of apricot and orange marmalade. The expression of the fruit and its finesse are respected thanks to the use of old barrels and a limited amount of new oak. Filtration is very light.

Pairing

Classic pairings: oysters, scallops, grilled lobster, sole with mushrooms, poultry in cream sauce, half-cooked foie gras and soft cheeses. Japanese cuisine: scallop sashimi, grilled white fish with butter or yuzu, chawanmushi, crab, ankake-style seafood and lightly seasoned chicken. Thai cuisine: steamed sea bass with lime, grilled prawns, crab dishes, coconut-leaning seafood curries and mild herb-led plates; keep chili moderate so the Viognier texture stays elegant.

Vinification

Fermented and ageing on lees during 10 months, with only 10% of new barrels.
