The Captain of Les Katz

Le Capitaine, meaning 'the captain' in French, was the first wine released in the Les Katz series, its name a nod to the natural affinity between dry Riesling and seafood.

The wine is produced by Domaine Léon Heitzmann, who took over the Les Katz brand and vineyards in Katzenthal, Alsace, from Clément Klur in 2017.

Glassware

A slim-bowled white wine glass that concentrates the wine's acidity and aromatic lift

At the table

Le Capitaine's dry structure and bright acidity make it a natural partner for seafood-forward dishes across several culinary traditions.

The wine's mineral acidity is built to complement briny, delicate proteins rather than rich or heavily sauced dishes, giving it flexibility from raw preparations to lightly cooked seafood.

Japanese

  • Sushi and sashimi with white fish and shellfish
  • Tempura
  • Shio-yaki (salt-grilled fish)

Why it worksThe wine's dry acidity and mineral edge complement the delicate texture of raw and lightly cooked fish without overwhelming it.

Thai

  • Yam woon sen (spicy glass noodle salad with shrimp and squid)
  • Po pia sot (fresh spring rolls)
  • Pla nueng manao (lime-steamed fish)

Why it worksThe wine's high acidity mirrors the sour-spicy balance of Thai dressings and matches the citrus and herb notes in these dishes.

Western

  • Oysters
  • Langoustine or prawns
  • Pan-seared sole or trout

Why it worksA classic pairing logic: the wine's saline minerality echoes the brininess of shellfish, while its acidity cuts through the delicate richness of pan-seared white fish.
