Three hundred metres below the surface off Muroto, the water has not touched the air for roughly two thousand years.
Tosatsuru has been brewing in Yasuda, Kochi since 1773. In a prefecture whose sake culture runs dry rather than sweet, the house built its reputation on restraint rather than richness.
The brewery draws that deep-sea water, removes the salt, and brews with what is left. The mineral balance drives a strong, clean fermentation — the reason the sake finishes dry without turning thin.
Its record at the National New Sake Appraisal runs to fifty gold awards. That is a measure of consistency over two and a half centuries, not of a single bottle.
The azure bottle was designed by an artist based in London. It was made to sit on a bar in Europe, next to Sancerre and Chablis, and to be judged the way those wines are judged.
