SEKITOBA Kame Chozo is a 25% honkaku imo shochu from Hamada Shuzo’s Sekitoba line, known as the yellow-label expression built around kame-aged imo-koji shochu. It combines the elegant Sekitoba base character with a small amount of rich sweet-potato-koji distillate matured for an unspecified period in traditional ceramic kame jars; this is separate from Sekitoba’s limited 15-year kame-aged SKU and should not be described as 15-year aged. The profile brings lightness, deep sweet-potato aroma, rounded umami, and a mellow finish.

Culinary affinity: The kame-aged depth, mellow texture, and sweet-potato richness complement grilled fish, pork, yakitori, simmered dishes, mushrooms, miso-led preparations, and Thai dishes with roasted aromatics or layered umami.
