In Kaga, Ishikawa, resting at the foot of the sacred Mount Hakusan, Kano Sake Brewery has drawn from the same well for over two centuries. This water begins as glacial melt, journeying deep underground before rising again. It is in this cold, clear stream that Jokigen begins.
Here, time is never rushed; it is honored. Over a period three times longer than standard brewing, the sake matures alongside the tiny, invisible life native to this brewery. No haste, no resistance—only patience. In time, the liquid deepens into a golden amber, gathering a richness that feels almost ancient.
