Light nose, both lemony and floral.
Taste
Green apples, almonds well defined by a fresh and non-aggressive acidity. Saline minerality on the finish.
Pairing
Classic pairings: seafood, goat cheese, Cantal, Beaufort, Parmesan, Roquefort and aperitif-style starters. Japanese cuisine: tempura, sushi with white fish, grilled squid, yuzu-ponzu seafood and light dashi dishes. Thai cuisine: som tam with restrained chili, steamed sea bass with lime, grilled prawns and herb-led seafood salads; acidity is the key bridge.
