In the village of Épineuil in the Yonne, northern Burgundy, the landscape unveils a serene, contemplative elegance—strikingly distinct from the glamorous hills of the Côte d’Or. There, a monastery that has witnessed the passage of eight centuries still stands in graceful silence.

In 1212, Cistercian monks established the Petit Quincy Abbey on this sacred ground. For them, prayer and labor were equally divine. On the slopes of the surrounding hills, they planted vines and began crafting wine.

By the Middle Ages, the wines of this region were traveling by river—from the Yonne into the Seine—making their way to Paris and gracing the banquets of the royal capital. In that sense, this very land can be considered one of the profound sources of Burgundy wine itself.

An Ancient Seabed in a Glass — The Kimmeridgian Soils Shared with Chablis “Cuvée Juliette” is born from an exclusive single-vineyard parcel known as Côte de Grisey. Facing southeast and pitched at a dramatic 45% incline, the parcel intimately spans only about 1.2 hectares.

The true signature of this terroir is its Kimmeridgian limestone—a magnificent geological formation from the late Jurassic period, embedded with countless tiny fossilized oysters. This ancient seabed, the very same that shapes the legendary terroir of Chablis, lends the wine its distinctive, elegant saline minerality.

The Pinot Noir vines, meticulously planted in 1978, are cultivated at a dense 9,600 vines per hectare. Beneath the shallow topsoil, their roots penetrate deep into fissures within the limestone bedrock. Excellent natural drainage from the steep slope and minerals drawn from the ancient rock below imbue the grapes with profound concentration and exquisite tension.

“Rigor and Purity” — Whole-Cluster Fermentation and Minimal Sulfur In 1990, Dominique Gruhier breathed new life into winemaking at the monastery. At the very core of his philosophy lies the mantra “Rigueur et Pureté”—rigor and purity. His ultimate vision is to minimize human intervention, allowing the pure, unadulterated voice of the terroir to be captured directly in the bottle.

All grapes are carefully harvested by hand. They are not destemmed; instead, they are fermented entirely as whole clusters. Fermentation unfolds naturally with native yeasts over roughly twenty days. Extraction is gracefully carried out through remontage, while aggressive pigeage is deliberately avoided to preserve the wine’s innate elegance.

The wine rests and ages in 228-liter Tronçais oak barrels, enhanced with about 30% new oak. At bottling, sulfur dioxide is added only sparingly—a mere 25 to 30 ppm—and the wine is neither fined nor filtered. Each meticulous choice is made with a singular devotion: never to obscure the authentic expression of the terroir.

Breathing New Life into a Monastic Legacy — Organic Farming and Eco-Grazing Gruhier’s dedication extends far beyond the cellar. In 2015, the domaine proudly obtained Ecocert organic certification, and in 2020, it was awarded a biodiversity label from the French League for the Protection of Birds (LPO).

Bird nesting boxes now grace the vineyards, while hedges and ancient trees are being replanted to beautifully restore the landscape. Beginning in 2023, the gentle practice of eco-grazing with sheep was introduced.

These sheep manage the weeds without excessively compacting the earth. Their presence serves as a natural fertilizer, awakening microbial life deep within the vineyard soils. This regenerative philosophy does more than merely enrich the ecosystem; it elevates the vitality of native yeasts and creates a harmonious virtuous cycle, ensuring the subtlest nuances of terroir are faithfully translated into every drop.

The Crown Jewel of the Domaine, Named for a Daughter “Cuvée Juliette” made its magnificent debut in 1999, the year Dominique’s eldest daughter, Juliette, was born. Sourced exclusively from the domaine’s finest parcel, Côte de Grisey, Dominique crafted a masterpiece bearing the name of his beloved daughter.

The 2021 vintage emerged from a challenging year marked by devastating April frosts, resulting in an exceedingly rare, limited yield. Yet, rather than mere power, this vintage expresses breathtaking transparency and absolute finesse. Its delicate aromas gracefully evoke cherry blossoms, while the palate delivers the taut, sophisticated structure of classic Burgundy.

In recent years, this exceptional cuvée continues to garner profound acclaim from France’s most respected wine guides—a resounding confirmation of the domaine’s remarkable and unwavering quality.
