Harmony with Nature

Domaine de Cazaban, a biodynamic winery, is located near Carcassonne in the Languedoc region of southwestern France. With 22 hectares of vineyards and an annual production of 85,000 bottles, the winery is famous for its thorough practice of organic and biodynamie (biodynamic) principles, with respect for nature and the production of high quality wines as its top priority. They are passionate about producing authentic wines using artisanal methods rather than mass production. Syrah, Grenache, Carignan, Cinsault, Mourvèdre, Marsanne, Vermentino, Viognier, Cabernet Franc, Merlot, Pinot Noir and Cabernet Sauvignon are grown and 100% hand picked.

At Domaine de Cazaban, the quality of the grapes is most important. They select grape varieties that are best suited to the geology and soil of the vineyards, and try to improve the soil by organic and biodynamic methods so that the vines can grow healthily in their natural environment. They carefully monitor changes in climatic conditions and work continuously to maintain the health and balance of the grapes.

This approach is reflected not only in the cultivation, but also in the winemaking process. During winemaking, we keep a close eye on changes while maintaining natural conditions, and we use our many years of experience and knowledge to create the ideal vinification process. During fermentation, we use natural fermentation with indigenous yeasts to ensure that the flavors of the wine are not damaged. The amount of sulfite (SO2) used is kept to a minimum, well below organic and biodynamic certification standards (Ecocert, demeter).

Domaine de Cazaban’s wines are truly craftsmen’s “works of art”, all of which are of high quality and beautifully presented on the palate. Therefore, some wines are released as “Vin de France” without the AOC name in order to freely expression their creativity. This is a proof of their self-belief in making authentic wines in harmony with nature.

Domaine de Cazaban continues to explore the possibility of making wines that are certified organic and biodynamic, but more closely natural. The result is a wine that is in harmony with nature and has a beautiful texture.
