The Renaissance of Muscadet Sèvre-et-Maine

Muscadet Sèvre-et-Maine, in northwestern France, close to the Atlantic Ocean, is an area that is positively affected by global warming and whose value is being re-evaluated. It is now attracting the attention of real wine connoisseurs from all over the world. The most notable of these is LE FAY D’HOMME, a small, family-owned Domaine run by Vincent Caillé.

Vincent Caillé’s family has owned and operated LE FAY D’HOMME for five generations. The company is in operation. He currently owns 25 hectares of his own vineyards and began winemaking in 1986. Vincent Caillé is now an inspirational leader for many young vignerons and is considered one of the leading men of the renaissance of Muscadet Sèvre-et-Maine.

LE FAY D’HOMME made the transition to organic farming under the inspired leadership of Pierre Masson, a master of biodynamic agriculture. The Moulon de Bourgogne grape variety is sensitive to fungal diseases, and only 2% of the entire appellation practices biodynamics. Vincent Caillé shows his commitment to organic farming in every detail, including the use of quartz from the high altitude of the Alps. Biodynamic viticulture is chosen to create an environment where the vines can easily absorb nutrients, and the wine is naturally fermented in the cellar without the addition of yeast and aged in cement tanks. The average age of the vines is 38 years, and they are nourished in the bottle by yeast sediments, offering 4, 6, and even longer aged versions.

LE FAY D’HOMME uses native wild yeasts in its winemaking, and it is sur lie for a long period of time using traditional methods. All cuvées are bottled without lees and kept on the lees for a short period of time to allow them to rest before shipping. Four red varieties (Gamay, Cabernet Franc, Abouriou, Côt) and two white varieties (Moulon de Bourgogne, Folle Blanche) are used.
