From the void where all was lost, a new sake begins.
March 2011. Otsuchi, Iwate. A brewery with over a century of history was swallowed by waves and fire, vanishing instantly. What remained was only the bare ground and a singular voice: “We will brew again.”
In Morioka, they built from zero. Possessing no blueprints from the past meant being unbound by convention. Under the banner of AKABU (Red Samurai), a twenty-two-year-old Master Brewer pressed the very first drop.”
They rejected the standard path. On the stage where Japan’s finest compete, they stood not with famous ingredients from elsewhere, but solely with Iwate rice and Iwate yeast. This was not rebellion; it was a vow to their land.”
