Hyogo, Nishiyama Brewery

It is known for producing Japanese sake that combines Yamada Nishiki, underground water from the Takeda River, and the techniques of the Tanba chief brewer using Tanba’s nature and technology, and its taste is highly praised. There is a building on the premises that has been designated as a nationally registered tangible cultural property, and the main building has been designated as an important landscape-forming building by Hyogo Prefecture. One of their sake is KOTSUZUMI named by Haiku poet Kyoshi Takaoka. The brewery has received high praise both domestically and internationally, including winning awards at Monde Selection and the International Taste Institute. KOTSUZUMI brewery is characterized by its deep interaction with cultural figures and by continuing to create products that combine old and new techniques.
