Pairing
Salad with duck gizzards, chicken supreme without thick sauce, fresh goat’s cheese. But it’s also magnificent on its own, with nothing but the finesse and elegance of Pinot Noir.
Vinification
Harvested by hand, the grapes are then sorted on a table and vinified in wooden vats. After around 3 weeks of vatting, the wine is gravity-filled into barrels in 228-litre barrels (20% of which are new). Then aged 18 months.
